In lockdown I have made banana egg pankaes. I don't have any photos as I've already eaten them but can share the recipe with you (it makes about 5).
Ingredients:
1 pelled banana
2 eggs
2 tablespoons of blanched almond meal
Choc chips/nuts/other (optional)
How to make:
Step 1: wisk eggs
Step 2: mash banana with fork
Step 3: add the mashed banana and almond meal with the eggs and mix
Step 5: heat non stick pan to over medium heat (this may need to be adjusted)
Step 6: place two tablespoons of the mixture and cook for about 1 minute (you can add your choc chips/nuts/other now) then flip and cook for about 1 more minute
Step 7: enjoy 🤗.
